Two weeks ago, David and I had the pleasure of driving 8 hours north to visit our friends, Ed and Becca in Vigo, Galicia. We had 2 extra days of work off for Dia de la Andalusia or the Day of Andalusia. It was exciting to get to see our friends and to explore the north of Spain.
Vigo is on the Northwest coast of Spain right above the border of Portugal. The weather was perfect and we spent some time relaxing and sunbathing on the beach. Becca taught us how to cook chipperones and mejillones (squid and mussels) for dinner. I have to admit I was a little hesitant to pull the inside guts out of the squid but I did it! Another night we cooked the most well-known dish in Spain, paella. It was so fun to get to explore and enjoy Galicia while also relaxing and doing normal daily activities. We even got to spend a day on a beautiful hike. The trail took us to the top of the mountain where we found an old celtic house. The landscape of Galicia is green and beautiful which was a change from our landscape of Olive Trees.
We also visited Santiago de Compostela, which is the capital of Galicia and is known for its cathedral which is the destination of the important 9th century medieval pilgrimage route, the Way of St. James. The cathedral was beautiful and we enjoyed the day walking around Santiago.

"Facho" is Galician for torch and "Donon" was a Celtic word meaning enclosure.
